I live in Johnson City/Jonesborough.  Rushing Waters is a great little store, carries a good selection for such a small place.  Good location, as they're right on the Nolichucky.  They're also super nice - let me borrow a drytop once when I was a dummy and left mine at home.  I've not seen them open often lately, but I've also been by at really random times.  They were open Tuesday afternoon (the river was up and the weather warm), though I didn't stop in. 

Mahoney's is the closest to me, but doesn't carry much selection in the way of boating gear.  They didn't have any nose plugs the last three times I was in.  Great store if you want outdoorsy (read: college kids) clothes, camping gear, hunting/fishing supplies.  Sad to see the boating section diminish over the years, but they have to stock what sells.  They do have some good employees (ask for Bill, he used to work for me), as well as some college kids just there for a job - same as any other store, I'm sure.

Rock/Creek is a great store, but 3, nearly 4 hours from here.  I don't make it to the Ocoee often, though not for lack of wanting to.  I make it out to NOC and the Nanty more often since I usually have a beginner or two with me.
