You may in fact like the jefe or diesel best, but what I would suggest would be to demo a few boats that are completely different to help you narrow down.

Try out something that is a river runner that can also run easy creeks (diesel, mamba, thunder) - just choose one of those.
Try out something that is pretty much a displacement creeker (like the rocker series)
Try out something that is a hybrid.  A burn or magnum(more of a creeker than the burn).

Then figure out what you like/dislike about those boats and you'll be in a much better position to narrow down your choices.
