One thing you may want to consider is since you only need 2WD is to go with the Prerunner for the additional ground clearance.  You can also get the TRD suspension package on the Prerunner, but unless you plan on four wheeling, which you probably don't want to do with a 2WD, the stock suspension is fine.  As far as bed length, the long bed on a double cab is going to make tight turns impossible, but  that extra foot in length is nice for hauling. 

I have a 2005 extended cab with 4cyl, manual, 4WD that I have been pleased with.  The gas mileage is really good for a 4WD, 22 - 23 all around and 26 highway.
