Personally, I like 12 degree offset.  Very little wrist roll at any time, with any move.  I've found that, persoanlly speaking, 0 degree actually makes one wrist roll the opposite driection (down).  Seems too far to me.  12 degree keeps them neutral and also makes setting up ridiculous easy...its much easier to know where the blades are and get them flat to the surface.  I dont have the underwater set up problems mentioned above.  The key is to slice the blade out of the water by simply rolling your wrist.  Makes playboating move a million times easier/faster too.

As for length, I like short.  Im 5'10" and use a 191.  I hear folks say a lot that the longer paddle makes you reach more and gives you more leverage.  I disagree.  Modern creek paddling techniques are to keep the paddle in close to the boat, using slightly more vertical strokes.  It's also noticable less paddle to get caught up in tight slots, and the more you have hanging beyond your hand, the deeper your blade will go...this can be bad in creekin as your blades are far more likely to pin in bottom rocks and get ripped from your hands.  Lay a 191 next to a 200...you'll be amazed.  But be sure to buy based on your size...way too long and way too short both suck!

I have one stick...a 191 that I use for everything...no adjustments needed based on season or run.
