probably has more high performance characteristics.  I don't think the boat is twitchy, but different paddling styles for each person....

I'm curious what you thought was twitchy about the Session.  If it's just the super squished ends or the boxy sided, then the Orbit Fish would probably feel just fine for you because it really doesn't have either of those to the same degree.

As far as the DragoRossi line goes, the Fish can be a bit twitchy for those who paddle leaning back and work most of their strokes in the back quadrants.  But, it's super stable and actually gets more stable at bigger water if you have a style in which you are leaning forward and make most of your moves with paddle strokes in the front.
Having said all of that, at your size it's probably wise to demo a Thruster instead of a Fish.  More foot and knee room, and still easy to throw around.

A used EZG might be an option for you too.  Won't exactly be a high performance machine (Orbit Fish & Thruster will outsurf it) but it's predictable and stable.  AND, there seem to be a bunch on the used market.
