you can convince her to intentionally flip over and hit her roll.

Also, to overcome her fear of swimming, maybe you could swim a few rapids with her.

Don't push her too hard, though. Focus on what makes her happy (don't we all love to hit clean lines!), and comfort her when she gets scared, and she'll eventually get over her fears. Otherwise, she may get so scared that she'll never have a good time.
