We'll just assume for now you mean generally.  Greater width means greater spinability, and probably bigger volume for a given length and depth, so the boat will float better.  It also means more friction, so it's slower.  If the width is above the waterline and forward, it gives the boat more rise in a wave.  It also affects how the boat feels, and sometimes the feel is more important than the physics.  Most people like boats with the wide point slightly behind the center of gravity.  It gets way more technical than that, and I'll leave that to any designers/engineering wonks out there who want to add info about shape.
Generally, I look for relatively narrow boats that still float me well.  Hence the whole demo thing, but I will use stats to narrow the field somewhat when I go looking.
