I had a V6 Dakota that got 19 mpg highway.  It also wasn't particularly zippy.  I now have a Sierra (same year) with a 5.2L V8 that will flat out go when you step on the gas, and I get 20 mpg on the highway.  V6s are inefficient engines in my experience.  If I had a choice, I'd get a 4 or an 8.  In most cases, the V6 gets the same mileage as the V8, just with less oomph.
