question Everest vs. Burn vs. Ammo New

Have a medium Ammo and love it, but sold my creekboat and am looking at either the Large Burn or Everest (used of course).  I have read the reviews between the differences and similarities.  I am looking for something for big water days when I am too scared to take the Ammo.  At 175 without gear, would the Everest be too big as a primary creeker?  Are the edges similar to the ammo or are the egdes more like the Burn?  Had the Ammo on U.Y. a bunch of times and U.Gauley and liked it, but want a winter/high water creeker.  Finally, is the Everest more forgiving and more of a "floater" than the Burn or does it have to be driven like the ammo and from what I have heard, like the burn too?  Thanks in advance for any help.
