You could ask them where it was demoed, but even if it was demoed on the Green twice, it shouldn't be too beaten up.  If its really only been on the water twice, it should have almost no scratches on the hull.  Look down the hull to see if it's bent/oil canned at all on the bottom, and look it over for any signs of a piton or any serious gouges.  Take a look at the interior too and make sure nothing's out of whack.

It is a good deal, but it's not 'too good to be true'.  I bought the Burn I still paddle now in April of '07 for $600 and it was used about 5 times, the guy just needed money to fix his car and he worked at a paddle shop, so he probably paid less than 6 for it anyway.  Go take a look at it and jump on it if it looks good.  Since your profile says you started last year and like class III you'll definitely be able to use it a lot before you hit anything seriously abusive to boats.
