I lived in Longmont for 2 years.  Now I live 20 minutes away in Boulder.  If I were in your shoes (looking for 1/2 way b/w Ft. Collins and Denver) Then eastern Longmont would be my first choice.  It will be the most convieniently located town for your commute that is also close to recreational opportunities.  Be aware the commute will often be longer than you think.  35-40 minutes will be accurate with out traffic but I would plan on normally a 1 hour drive to each school under average traffic conditions.  

Longmont is a great place to live.  I've heard there is even a play park in the works for the St. Vrain creek right in town.  I don't know how far out that is.  I agree that you will often be driving for night life but it is centrally located for everything else.  Several play parks with in 20 minutes to 1 hour.  Poudre (classic river) is 1 hour away.  Clear Creek is 40 min- 1 hour depending on traffic.  Creeking with in 20 minutes outside of Lyons.  

Additionally the views of the Front Range from the old town Longmont area are the best in the whole area, IMHO.

There are lots of rentals in Longmont, and I doubt that dogs would be a problem.

Close to Rocky Mtn. Natl. Park and other great hiking areas as well.
