The road all the way 'round may not be accessible. The desert part isn't always open. The car rental place you go to would probably be able to tell you if the road's open.

If you're there only for eight days, the trip to Hana would take a chunk of time. Nice black sand beach, if you get there, but watch out for jellyfish.

One of the Waylan galleries is in Lahaina, which I thought was neat.

If you have the cash, the Molokinis are good for snorkeling and scuba. Some of the zodiac whale watching trips may also still be going.

I'd second the suggestion of going up the Mt. Haleakala crater to the observatory - on a good day you can see the ski area on Hawaii. Take a jacket if you go.  I wouldn't bother with the bike trip tours that go down the crater, though. I didn't like the speed restriction that they make you ride at.

Snorkeling is usually OK at most of the beaches.
