The Shack BBQ Recipe

And the history

 

 

The Shack was BBQ business that operated in Little Rock during the ‘70s at least as I remember.  No clue when it shut down.  But it was legendary.  Even today.  The recipe here comes from a lady who worked at the original location for 14 years.

 

Her name is Jane Doe and she lived in North Little Rock.  She said that this recipe is what they gave to the employees to make up when needed.  The following gives a small batch.  Enjoy.

 

Small Batch

 

½ onion chopped, optional

12 oz. cider vinegar

19 ½ oz. catsup

19 ½ oz. water

2 ¼ tbps. Salt

2 ¼ tbps. Sugar

2 ¼ tbps. ground black pepper

2 ¼ tbsp. chili powder

 

Put all ingredients in cooking pot.  Bring to boil, reduce heat and simmer 30 minutes or until sauce turns to a dark color.  You will know.  Does not need refrigeration for at least 60 days.  Will make about ½ gallon.
