I live in Bryson and would be up for a paddle on Sunday afternoon. If you're looking to paddle all of the Nanty, then 3pm is pushing it. They turn the water off at 5pm tomorrow. I'm sure you could get in Ferebee down if you're thinking of just river running. Consider starting around 1pm if you want to do the whole thing.
