Need more info such as paddle boat or oar rig. My experience is mostly with older Sotar (late 80's early 90's 12-13ft) and 13-14 Aire R and E, Both with 6 or so touroids.  I currently own a SDPuma, but mostly row it.

But from a paddle boat point of view:
Fastest-- easiest to get to speed will be Sotar, but Aire maintain speed better through choppy waves.
Nimblest-- Sotar, easy to turn, quick, and responsive
Track better/worse -- Aire once on track it continues in that same direction, Sotar don't track but float on the surface, even more so with a drop stitch floor. With Sotar you can use surface currents easier, but some may prefer the point and go of an Aire.
Weight-- Sotars are lighter

I am not a fan of dimension tube designs for paddle rafts.  IMO SDPuma is too narrow for a paddle raft, unless you have 4 or less.
