Drop stitch is basically two peices of fabric with bajilions of threads running from the top peice of fabric to the bottom peice of fabric, envision a thermarest and instead of foam between the two peices of fabric its a bajilion threads holding the two usually 6" apart, they make varrying thicknesses but 6" is the standard. Then they laminate the fabrics to boat fabric and seal the sides. An I beam floor is basically a heavy duty oversized inflatable camp mattress. The top and bottom are held together with vertical peices of fabric running lengthwise every 4" or 5". People have their opinions as to how flat vs I beam performs and you'll hear everything under the sun as to why people like either. The standard argument is I beams track better and flat floors pivot, slide over rocks and manuever better. Personally I like a flat floor, I just bleed a bit of air out when I need it to track and it will track every bit as good as an I beam.
